Option select occurs when the action of the player is ambiguous, so the computer decides what to do for you. The purpose of inputting anoption select is so multiple outcomes are possible for one action.

A classic example of option select is Ryu's Forward Strong + Throw option select in SF2. If you're outside of throw range, Forward and Strong will come out, whereas if you're in throw range your throw will come out.

Another example is a crouching tech, where you hold down-back and press throw. If the opponent throws, you will tech it, if not you will get a crouching light attack.

There are an infinite amount of option selects in fighting games so it's best to look at character specific guides and forums to see what they are specifically for your character.
